Cajun Nuts

Yield: 5 cups

Ingredients:

5 cups unsalted mixed nuts
1 ½ teaspoons Cajun seasoning
1 teaspoon salt
2 teaspoons sugar
2 tablespoons unsalted butter

Cajun seasoning:

2 tablespoons garlic granules
1 tablespoon ground cumin
1 tablespoon paprika
1 teaspoon finely crumbled dried parsley
1 teaspoon cayenne pepper
1 teaspoon black pepper
1 teaspoon white pepper
½ teaspoon ground dried oregano
½ teaspoon ground dried thyme

Directions:

Heat the oven to 200º.

In a small bowl, combine all ingredients for the Cajun seasoning. (You will only use 1 ½ teaspoons of this mixture. Save the rest for other uses.)

In a small pan, melt butter over low heat. Place nuts in a large bowl. Drizzle butter over nuts and toss to coat. In a small bowl combine 1 ½ teaspoons Cajun seasoning, 1 teaspoon salt, and 2 teaspoons sugar. Sprinkle the mixture over nuts and toss to coat evenly.

Place nuts onto a large baking sheet and place in the oven for 45 minutes, stirring every 15 minutes. Cool and serve or store in an air-tight container.

Recipe Note: Suitable nuts for this recipe include, but are not limited to, peanuts, pecans, walnuts, almonds, and cashews.
