Poultry Seasoning & Chicken Salad

Yield: about ½ cup seasoning mix

Ingredients:

4 ½ teaspoons dried rosemary
4 teaspoons dried oregano
4 teaspoons dried oregano
3 ¾ teaspoons dried sage
3 ½ teaspoons ground dried ginger
3 teaspoons dried marjoram
2 ¾ teaspoons dried thyme
¾ teaspoon ground black pepper

Directions:

Using a coffee or spice grinder, mix together and grind to a fine powder.

Chicken (or Turkey) Salad

Yield: about 2 1/2 cups

Ingredients:

1 ½ cups cooked chicken (or turkey) pulled apart into bite-sized pieces
½ cup coarsely chopped celery (or apple or fennel or radish)
2 scallions, white and green parts, sliced (or one large shallot, chopped)
½ cup mayonnaise
1 teaspoon poultry seasoning
Salt and pepper to taste

Directions:

Put poultry meat into a large bowl. Add celery, mayonnaise, poultry seasoning, and salt. Stir to mix. Serve on salad greens or as a sandwich.

Note: When chopped apples are used, add 1 teaspoon fresh lemon juice to this recipe.
