Indian Lamb Burgers

Serves 6

Ingredients:

1 pound ground lamb
2 Thai chiles, minced
1/4 cup almonds, roasted and chopped
5 tablespoons chopped fresh mint leaves
Zest and juice of 1 lime
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon garam masala
3 tablespoons sour cream
1 egg
1 teaspoon salt

EQUIPMENT NEEDED: outdoor grill or large skillet

DIRECTIONS:

Place the lamb in a mixing bowl. Fold in the chiles, almonds, mint, lime zest, lime juice, coriander, cumin, garam masala, sour cream, egg and salt. Shape into small patties. Preheat an outdoor grill. Place the patties on the grill rack. Grill to 160 degrees on a meat thermometer and until brown on both sides. Serve with mango chutney.

Note : These minty and spicy burgers are a nice change from the usual beef burgers. Instead of grilling, the burgers may be cooked in olive oil in a large skillet.
